Mexican Burritos
INGREDIENTS
  • 450g (1lb) lean minced Farm Quality Assured beef
  • 1 chopped onion
  • 1 red pepper, seeded and finely chopped
  • 1 green pepper, seeded and finely chopped
  • 4 x 15ml sp (4tbsp) tomato puree
  • 1 x medium jar of salsa sauce (approx. 460g)
  • 1 pack of flour tortillas
  • 50g (2oz) Cheddar cheese, grated

Method (Serves 4)

Dry fry mince with the onion until browned. Add pepper and cook for 3-4 minutes. Add tomato puree and salsa sauce. Cover pan and simmer for 15 minutes. Serve this mixture in the tortillas in either of the following methods: Heat a non-stick frying pan. Place tortilla into pan, add a spoonful of the mixture, sprinkle with a little cheese. Brush the edge with water and fold into a "D" shape (be careful not to burn fingers – use an oven glove). Press on edge to seal. Fry for 1-2 minutes on each side or place mixture in line down the centre of the tortilla, fold in each side and top and bottom.Place fold side down in microwave dish. Sprinkle with a little cheese and microwave for approximately 1-1½ minutes on high. Serve with a mixed salad and Mexican dips of your choice.
