Method (Serves 4)
• Prepare the meat. Combine the marinade ingredients and leave meat to marinate (20 minutes if possible).
• Combine the sauce ingredients in a separate bowl.
• Heat oil in a large pan. Remove meat from marinade, draining off as much of the liquid as possible. Stir fry meat until cooked through.
• Add babycorn and cook for 2-3 minutes. Add remainder of the ingredients and cook briskly for 3-4 minutes.
• Give the sauce a stir to distribute the cornflour. Add to the pan. Stir gently for 2-3 minutes to thicken the sauce and to cook the cornflour.
• Serve immediately with rice and garnish with spring onion.
