Quick Massala
INGREDIENTS
  • 225g (8oz) lean beef grilling/frying steaks
  • 2 x 15ml sp (2tbsp) tikka curry paste
  • 1 onion, thinly sliced
  • 1 courgette, finely diced
  • 300ml (1/2 pt) passatta or
  • 1 x 400g can chopped tomatoes
  • 2 x 15ml (2tbsp) greek yogurt
  • 150g (5oz) cherry tomatoes, halved

Method (Serves 2)

• Cut the beef grilling/frying steaks into 1.25cm (½ inch) cubes. In a large hot non-stick wok or saucepan fry the cubes in tikka curry paste until browned, approximately 3-4 minutes.

• Add onion and courgette and cook for 4 minutes.

• Add passatta or can of chopped tomatoes and cook for a further 3-4 minutes then stir through greek yogurt and cherry tomatoes. Gently heat for 1 minute.

• Serve the curry with naan breads or poppadoms and boiled rice.
