Bolognese Meat Balls
INGREDIENTS
  • For the Meatballs:
  • 1lb/450g Farm Quality Assured lean minced beef
  • 2x15ml sp (2tbsp) tomato puree
  • 1x2.5ml sp (1/2 tsp) dried mixed herbs
  • 2 tomatoes, seeded, chopped or 8 sundried tomatoes, chopped
  • Salt and black pepper
  • For the Sauce:
  • 1 onion, chopped
  • 1 carrot, peeled, diced
  • 1 stick celery, chopped
  • 1 clove garlic, crushed
  • 400g can chopped tomatoes
  • 300ml (1/2 pint) stock
  • 1x2.5ml sp (1/2 tsp) dried mixed herbs
  • Pinch sugar
  • Salt and black pepper

Method (Serves 3-4)

For the meatballs, mix all the ingredients together and shape into 12-15 meatballs. In a large non-stick saucepan, dry fry the onion, carrot, celery, garlic for 4-5 minutes. Add the rest of the sauce ingredients and bring to the boil. Place the meatballs in the sauce and simmer, uncovered for 20-25 minutes, until meatballs are cooked and sauce has thickened. Serve the meatballs with spaghetti and a large mixed salad or seasonal vegetables and garlic bread.
